Lemon Walnut-Crusted Salmon: A Quick & Healthy Dinner Recipe

Ingredients (Serves 4)

  • 2 tsp Dijon mustard

  • 1 clove garlic, minced

  • ¼ tsp lemon zest

  • 1 tsp lemon juice

  • 2 Tbsp fresh dill, chopped

  • ½ tsp sea salt

  • 1-2 dashes crushed red pepper

  • ¼ cup (15 g) almond flour

  • ¼ cup (35 g) finely chopped walnuts (I have added black sesame seeds to this for more color, nutrients and texture - optional)

  • 1 Tbsp ghee

  • 1 lb (450 g) salmon filet (skinless if preferred)

Instructions

🔥 Step 1: Preheat the Oven

Preheat your oven to 425ºF (220ºC) and line a rimmed baking sheet with parchment paper or lightly coat with ghee or olive oil.

🥣 Step 2: Prepare the Mustard Mixture

In a small bowl, combine Dijon mustard, garlic, lemon zest, lemon juice, dill, and crushed red pepper. Mix well.

🥜 Step 3: Make the Walnut Crust

In another bowl, mix together almond flour, chopped walnuts, and ghee.

🐟 Step 4: Coat the Salmon

Place the salmon filet on the prepared baking sheet. Spread the mustard mixture evenly over the salmon, then sprinkle the walnut mixture on top, pressing gently to adhere.

⏲️ Step 5: Bake to Perfection

Bake for 10-12 minutes or until the salmon flakes easily with a fork.

🍽️ Step 6: Serve & Enjoy

Pair with roasted root vegetables and a fresh side salad for a well-balanced meal. If you have leftovers, chop up the salmon and add it to a salad for tomorrow’s lunch!
